Bob & Caroline Scott of the Louisville Athletic Club gave us some more fabulous tips today on Summer Health and Fitness. Today we learned that Smoothies can be a great meal replacement option during the hot summer months - especially for those on the go. Here are some tips on how to keep your summer smoothies both delicious AND healthy.
"I love smoothies; because they are quick, healthy, and delicious. It's so easy to just throw all the ingredients in a blender and push start. Plus, it's a milkshake without all the calories. Smoothies are actually very good for you - IF you put the right things in. Some of my favorite creations are: Peanut Butter & Jelly, Chocolate Mocha, Strawberry Bananalicious, Apple Cinnamon, Chocolate Peanut Butter Banana, Mocha Almond. I make sure that I use healthy all natural ingredients to keep the calories low and the taste abundant." - Caroline ScottBob Scott's Tips for making Great Smoothies:

Meatless Monday:
I ended up doing Meatless Sunday instead of Meatless Monday this week. I made Grilled Zucchini over the weekend. I forgot to take note of my ingredient measurements, but it was simple enough I'll try to share later. In the meantime, here's another great meat free recipe for you.
